This turned out to be one fabulous recipe and I am so excited to share it with you..
I will share as always a few tips and tricks to help you along the way.
Ingredients:
1 kilo beef strip loin trussed
2 tbsps of oil for the marinade
4 tsps salt
1/2 tsp pepper
2 tsps coriander powder
1 tsp chili powder
1 tsp thyme
1 tbsp of oil for cooking
Oven temperature: 180C
Optional:
Vegetables such as onions, garlic, carrots, spring onions etc chopped in big chunks.
METHOD:
Get your butcher to truss the meat. Trussing simply means rolling the beef, fat side outside and tying it up to maintain its shape when cooking.
Rub the beef with 2 tbsps of oil.
Sprinkle over the rest of the ingredients. Rub the marinade over the beef to coat evenly.
Make a few slits in the beef on the top side.
Put a tbsp of oil in your grill pan. Choose a pan where the handle can be removed so that you can place it in the oven to finish the cooking.
Add the beef in the grill pan. Using tongs, Turn the meat frequently to evenly brown all the sides.
Add in your vegetables and toss them around to let the juices flavor the veggies.
Place uncovered in a preheated oven for 1 hour and 10 mins.
Remove from the oven and let it rest for around 10 mins for the juices to settle in the meat again.
Then slice and serve alongside the vegetables or even with some potatoes on the side.
