This is a great way to present the simple Indian tomato salad that we usually serve with most Indian meals in a more formal way.
Ingredients:
2 large tomatoes or 3 medium tomatoes
1 medium onion
1 lime
1 tbsp of olive oil
Handful of fresh coriander/kotmir leaves
1 green chilly chopped finely (optional)
salt to taste
pepper to taste
Method:
Peel and cut your onion in half. Remove the core and cut the half into another half. Then slice the onions into the thickness you prefer..
Next slice the tomatoes into nice slices. Discard the two ends of the tomato.
Wash and chop your coriander/kotmir leaves finely.
Assemble your tomatoes first on a nice pretty serving plate. Sprinkle over the onions on top. Season with salt and pepper.
If you would like your salad with a touch more spice, sprinkle over your finely chopped green chillies at this point.
If you have a lemon squeezer, place your limes in the squeezer and drizzle the lime juice over your salad. I prefer to buy the USA green key limes as they are seedless and have a lot more juice and slightly less tart than the really small green local indian ones.
Drizzle the olive oil over the salad. I use extra virgin cold pressed olive oil which is great for salads.
Garnish with fresh coriander/kotmir leaves on top and serve immediately.
Tip: Most recipes call for cucumber as one of the ingredients as well. If you would like to add cucumber, then I would recommend you cut it in thin slices as well.
Do not prepare this salad in advance, as the tomatoes will slowly render its juices and you will have a soggy salad.
